Mediterranean Baked Fish with Olives and Capers

Ingredients
- 4 (6 oz each) salmon fillets
- 1/2 cup (pitted, such as kalamata) olives
- 2 tbsp (drained) capers
- 1 (sliced into rounds) lemon
- 2 cloves (minced) garlic
- 1 tbsp (chopped) fresh oregano
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 bunch (trimmed) asparagus
- 1 cup cherry tomatoes
Instructions
- Step 1: Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Step 2: Place salmon fillets on the baking sheet. Top each with a slice of lemon, 1/4 cup olives, 1/2 tbsp capers, minced garlic, and chopped oregano.
- Step 3: Drizzle with olive oil and season with salt and pepper.
- Step 4: Arrange asparagus and cherry tomatoes around the salmon on the same baking sheet.
- Step 5: Bake for 12-15 minutes until salmon is cooked through and flakes easily with a fork.
