Instructions
- Step 1: Preheat oven to 400°F (200°C) and arrange carrot medallions in a single layer on a parchment-lined baking sheet.
- Step 2: Whisk miso paste, rice vinegar, and sesame oil in a small bowl until smooth.
- Step 3: Brush miso mixture evenly over carrots, ensuring each medallion is coated.
- Step 4: Roast for 20-22 minutes until edges are caramelized and carrots are tender when pierced with a fork.
- Step 5: Remove from oven and immediately sprinkle with toasted sesame seeds and chopped cilantro.
