Miso-Glazed Salmon with Sesame-Ginger Scallions

  1. Step 1: Whisk miso paste, rice vinegar, mirin, and 1 tsp sesame oil in a bowl until smooth. Brush half over salmon fillets, reserving the rest.
  2. Step 2: Heat a non-stick skillet over medium-high heat. Place salmon skin-side down and cook for 4 minutes without moving.
  3. Step 3: Flip salmon, brush with reserved miso mixture, and cook for 3-4 minutes until internal temperature reaches 125°F (52°C).
  4. Step 4: While salmon cooks, heat remaining 1/2 tsp sesame oil in a small pan. Add ginger and scallions, sautéing for 2 minutes until fragrant.
  5. Step 5: Transfer salmon to plates, top with ginger-scallion mixture, and sprinkle with sesame seeds before serving.
