Miso-Glazed Sweet Potato Hash

- 2 lbs (1-inch cubes) sweet potatoes
- 1 large (thinly sliced) onion
- 2 tbsp white miso paste
- 1 tbsp maple syrup
- 1 tsp sesame oil
- 2 cloves minced garlic
- 1 tbsp toasted sesame seeds
Instructions
- Step 1: Preheat oven to 400°F. Toss sweet potato cubes with 1 tbsp olive oil, salt, and pepper; spread on a baking sheet.
- Step 2: Roast for 20 minutes, stirring once, until edges are crisp.
- Step 3: While potatoes roast, heat sesame oil in a skillet over medium heat. Add onions and cook for 8 minutes until golden and softened.
- Step 4: Stir in miso paste, maple syrup, and minced garlic; cook for 1 minute until fragrant.
- Step 5: Add roasted sweet potatoes to the skillet, tossing to coat evenly. Cook for 3 minutes to caramelize the glaze.
- Step 6: Transfer to a plate and sprinkle with toasted sesame seeds.
