Ingredients
- 1 cup brown lentils
- 2 medium carrots
- 2 stalks celery
- 1 can (14 oz) diced tomatoes
- 4 cups chicken stock
- 2 cloves garlic
- 1 tsp thyme
- 1 bay leaf
- 1 tbsp olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Step 1: Rinse 1 cup brown lentils under cold water. Dice 2 medium carrots and 2 celery stalks into 1/2-inch pieces. Mince 2 garlic cloves.
- Step 2: Heat 1 tbsp olive oil in a large pot over medium heat. Add carrots, celery, and garlic, sautéing for 4 minutes until vegetables soften slightly.
- Step 3: Stir in rinsed lentils, 1 can diced tomatoes, 4 cups chicken stock, 1 tsp thyme, 1 bay leaf, 1 tsp sea salt, and 1/2 tsp black pepper. Bring to a gentle boil.
- Step 4: Reduce heat to low, cover, and simmer for 30 minutes until lentils are tender but not mushy. Remove bay leaf before serving. Taste and adjust salt if needed.
