Mushroom and Spinach Egg Muffins

  1. Step 1: Preheat oven to 350°F (175°C) and line a muffin tin with paper liners. In a medium bowl, whisk together 6 large eggs, 1/4 tsp salt, 1/8 tsp black pepper, and 1/4 tsp onion powder until well combined.
  2. Step 2: Heat 1 tbsp avocado oil in a non-stick skillet over medium heat. Add 1 cup finely chopped cremini mushrooms and cook for 5 minutes until softened and golden. Stir in 2 cups roughly chopped fresh spinach until wilted (about 2 minutes), then let cool slightly.
  3. Step 3: Fold cooked mushroom-spinach mixture into the egg mixture. Divide evenly among the 6 muffin cups. Bake for 18-20 minutes until set and lightly golden on top.
