Mustard Seed-Spiced Mixed Vegetable Stew

  1. Step 1: In a large pot, heat 1 tbsp coconut oil over medium heat. Add 1 tsp mustard seeds and 1/2 tsp cumin seeds, and cook for 1 minute until mustard seeds pop.
  2. Step 2: Add 1/2 cup diced onions and 1/4 cup diced tomatoes to the pot, and cook for 5 minutes until onions are soft and tomatoes break down.
  3. Step 3: Stir in 1/4 tsp turmeric, 1/2 tsp red chili powder, and 1 cup diced mixed vegetables, and cook for 5 minutes until vegetables begin to soften.
  4. Step 4: Add 1 cup water and 1/2 cup coconut milk, and bring to a simmer. Cover and cook for 15 minutes until vegetables are tender.
  5. Step 5: Stir in 1 tsp garam masala and adjust salt to taste. Garnish with 2 tbsp chopped coriander leaves.
