Nostalgic Tomato Basil Soup with Dill

- 1 medium, finely diced onion
- 1 medium, diced carrot
- 2 stalks, diced celery
- 2 tbsp olive oil
- 14.5 oz canned diced tomatoes
- 4 cups chicken broth
- 1 tbsp, chopped dill
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Step 1: Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 diced onion, 1 diced carrot, and 2 diced celery stalks. Sauté for 8 minutes until vegetables are softened and translucent.
- Step 2: Stir in 14.5 oz canned diced tomatoes with their juice, 4 cups chicken broth, 1 tsp sea salt, and 1/2 tsp black pepper. Bring to a gentle boil, then reduce heat to low.
- Step 3: Simmer uncovered for 25 minutes, stirring occasionally, until flavors meld and vegetables are very tender.
- Step 4: Remove from heat and stir in 1 tbsp chopped dill. Let stand for 5 minutes before serving to allow flavors to develop.
