One-Pan Creamy Mushroom and Spinach Pasta

Ingredients
- 12 oz spaghetti
- 2 tbsp olive oil
- 8 oz cremini mushrooms
- 3 cloves, minced garlic
- 1/4 cup heavy cream
- 1/2 cup, grated Parmesan cheese
- 4 oz fresh spinach
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup, reserved pasta water
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 12 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 8 oz sliced cremini mushrooms and cook for 5-7 minutes until golden and tender, then add 3 minced garlic cloves and cook for 1 minute until fragrant.
- Step 3: Stir in 1/4 cup heavy cream and 1/2 cup reserved pasta water, then simmer for 2 minutes until slightly thickened.
- Step 4: Add the drained spaghetti and 4 oz fresh spinach to the skillet, tossing until spinach wilts and pasta is coated, about 1 minute.
- Step 5: Stir in 1/2 cup grated Parmesan cheese until melted, then season with 1/2 tsp salt and 1/4 tsp black pepper. Toss until sauce coats every strand.
