  1. Step 1: Preheat oven to 425°F. Place 1.5 lbs diced potatoes on a large rimmed baking sheet. Drizzle with 2 tbsp olive oil, 1 tsp salt, and 1/2 tsp black pepper. Toss to coat and spread in an even layer.
  2. Step 2: Roast potatoes for 20 minutes while preparing chicken.
  3. Step 3: In a small bowl, mix 4 minced garlic cloves, 1 tsp dried rosemary, 1 tsp dried thyme, 1/2 tsp salt, and 1/2 tsp black pepper. Rub this mixture evenly over 4 chicken thighs.
  4. Step 4: After 20 minutes, remove potatoes from oven and add 12 oz trimmed green beans to the pan. Return to oven and roast for 15 minutes.
  5. Step 5: Place chicken thighs on top of vegetables and roast for 20-25 minutes more until chicken is cooked through (internal temperature 165°F) and potatoes are golden.
  6. Step 6: Serve with lemon wedges.
