One-Pan Lemon Dill Pasta with Asparagus

  1. Step 1: Bring a large pot of salted water to a rolling boil. Add 8 oz linguine and cook for 8 minutes until al dente, then drain and reserve 1/2 cup pasta water.
  2. Step 2: While pasta cooks, heat 2 tbsp olive oil in a large skillet over medium heat. Add 3 minced garlic cloves and 1/4 tsp red pepper flakes, sautéing for 1 minute until fragrant.
  3. Step 3: Add 12 oz trimmed asparagus pieces to the skillet and cook for 4 minutes until crisp-tender, then stir in 1/2 cup vegetable broth and 2 tbsp lemon juice, simmering for 2 minutes until slightly reduced.
  4. Step 4: Add the drained linguine to the skillet along with 1/4 cup reserved pasta water, tossing to coat; cook for 1 minute until the sauce thickens.
  5. Step 5: Stir in 1 tbsp fresh dill and season with salt and pepper to taste; remove from heat and sprinkle with 2 tbsp grated Parmesan cheese.
