Ingredients
- 8 oz linguine
- 2 tbsp olive oil
- 12 oz, peeled and deveined shrimp
- 2 cloves, minced garlic
- 1 cup, halved cherry tomatoes
- 1, juiced and zested lemon
- 1/4 cup, chopped fresh basil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Bring a large pot of salted water to a boil. Cook 8 oz linguine for 7 minutes until al dente, then reserve 1/2 cup pasta water before draining.
- Step 2: While pasta cooks, heat 2 tbsp olive oil in a large skillet over medium heat. Add 12 oz shrimp and cook for 2 minutes per side until pink and opaque. Remove shrimp and set aside.
- Step 3: Add 2 minced garlic cloves and 1 cup halved cherry tomatoes to the skillet, cooking for 3 minutes until tomatoes soften. Stir in 1 lemon, 1/2 tsp salt, 1/4 tsp black pepper, and 1/4 cup chopped basil. Return drained linguine to the skillet, adding 1/4 cup reserved pasta water to create a glossy sauce, tossing for 2 minutes until coated.
