One-Pan Sausage and Peppers with Cherry Tomatoes

Ingredients
- 12 oz, casings removed Italian sausage
- 2, 1 red and 1 green, thinly sliced bell peppers
- 1 cup, halved cherry tomatoes
- 1 small, thinly sliced onion
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1/4 cup, chopped fresh basil
Instructions
- Step 1: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 12 oz Italian sausage (casings removed) and cook for 5 minutes, breaking into small pieces with a spoon until browned.
- Step 2: Add 2 bell peppers (thinly sliced), 1 small onion (thinly sliced), and 1 tsp dried oregano. Season with 1/4 tsp salt and 1/8 tsp black pepper. Cook for 5 minutes until vegetables begin to soften.
- Step 3: Stir in 1 cup cherry tomatoes (halved) and cook for 3-4 minutes until tomatoes burst and release juice. Sprinkle with 1/4 cup fresh basil and serve immediately.
