One-Pan Sausage and Peppers with Mushrooms

Ingredients
- 12 oz Italian sausage
- 2 medium (1 red, 1 green) bell peppers
- 1 medium yellow onion
- 8 oz cremini mushrooms
- 3 tbsp olive oil
- 2 cloves garlic
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1/4 cup chicken broth
- to taste salt
- to taste freshly ground black pepper
Instructions
- Step 1: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook for 5-6 minutes, breaking it into small pieces, until browned and cooked through. Transfer sausage to a plate.
- Step 2: Add remaining 1 tbsp olive oil to the skillet. Add sliced bell peppers, onion, and mushrooms. Cook for 8-10 minutes, stirring occasionally, until vegetables are tender and lightly browned.
- Step 3: Add minced garlic, dried oregano, and red pepper flakes to the skillet. Cook for 1 minute until fragrant. Stir in the cooked sausage and chicken broth, then season with salt and pepper to taste. Cook for 2-3 minutes until sauce thickens slightly and coats the vegetables.
