One-Pot Tomato and Sausage Pasta with Garlic Bread

Ingredients
- 8 oz penne pasta
- 1 tbsp olive oil
- 1/2 lb, casings removed Italian sausage
- 1 medium, diced onion
- 3 cloves, minced garlic
- 1 (28 oz) can crushed tomatoes
- 1/2 cup vegetable broth
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1/4 cup, grated Parmesan cheese
- 1/4 cup, chopped fresh basil
- 2 slices, cut into 1/2-inch pieces baguette
Instructions
- Step 1: Heat 1 tbsp olive oil in a large pot over medium heat. Add 1/2 lb Italian sausage and cook for 6-8 minutes until browned and cooked through, breaking into small pieces with a spoon.
- Step 2: Add 1 medium diced onion and 3 minced garlic cloves to the pot and cook for 3-4 minutes until onion is translucent and fragrant.
- Step 3: Stir in 1 can crushed tomatoes, 1/2 cup vegetable broth, 1 tsp dried oregano, and 1/2 tsp red pepper flakes. Bring to a simmer and cook for 10 minutes.
- Step 4: Add 8 oz penne pasta to the pot, stirring to submerge. Cook for 12-15 minutes, stirring occasionally, until pasta is al dente and sauce thickens.
- Step 5: Stir in 1/4 cup grated Parmesan cheese and 1/4 cup chopped fresh basil. Toast 2 baguette slices (cut into 1/2-inch pieces) in a 375°F oven for 5 minutes until golden. Serve pasta with garlic bread.
