One-Pot Chicken and Vegetable Fried Rice

Ingredients
- 2 boneless, skinless chicken breast
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 3 cups white rice
- 1 cup mixed vegetables
- 2 green onions
- 1 clove garlic
- 1 tbsp vegetable oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Mix 2 tbsp soy sauce, 1 tbsp rice vinegar, and 1 tbsp sesame oil in a bowl. Add diced chicken and toss to coat; marinate for 5 minutes.
- Step 2: Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add marinated chicken and cook for 5-6 minutes until browned and cooked through; remove and set aside.
- Step 3: Add minced garlic to the skillet and cook for 30 seconds until fragrant.
- Step 4: Add mixed vegetables and cook for 2 minutes until heated through.
- Step 5: Add 3 cups cooked rice and stir to combine. Return chicken to skillet and mix well.
- Step 6: Stir in sliced green onions and cook for 1 minute until heated through. Season with salt and pepper.
