One-Pot Chicken and Vegetable Fried Rice

  1. Step 1: Mix 2 tbsp soy sauce, 1 tbsp rice vinegar, and 1 tbsp sesame oil in a bowl. Add diced chicken and toss to coat; marinate for 5 minutes.
  2. Step 2: Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add marinated chicken and cook for 5-6 minutes until browned and cooked through; remove and set aside.
  3. Step 3: Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  4. Step 4: Add mixed vegetables and cook for 2 minutes until heated through.
  5. Step 5: Add 3 cups cooked rice and stir to combine. Return chicken to skillet and mix well.
  6. Step 6: Stir in sliced green onions and cook for 1 minute until heated through. Season with salt and pepper.
