One-Pot Chicken with Lemon and Rosemary

Ingredients
- 1.5 lbs chicken thighs
- 1 lb potatoes
- 1 lemon
- 2 tbsp fresh rosemary
- 2 tbsp olive oil
- 3 cloves garlic
- 1 cup chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Step 1: Pat 1.5 lbs chicken thighs dry with paper towels, then season with 1 tsp salt and 1/2 tsp black pepper.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the chicken thighs skin-side down and cook for 5 minutes until golden, then flip and cook for 3 more minutes.
- Step 3: Remove the chicken and set aside. Add 1 lb peeled and cubed potatoes to the skillet, cooking for 5 minutes until slightly golden.
- Step 4: Add 3 minced garlic cloves and 2 tbsp fresh rosemary, cooking for 1 minute until fragrant.
- Step 5: Squeeze the juice of 1 lemon and add 1 cup chicken broth, then stir to combine.
- Step 6: Return the chicken to the skillet, nestling it among the potatoes. Bring to a simmer, then cover and cook for 25 minutes, or until the chicken is cooked through and potatoes are tender.
- Step 7: Let rest for 5 minutes before serving.
