One-Pot Chicken with Lemon and Rosemary

  1. Step 1: Pat 1.5 lbs chicken thighs dry with paper towels, then season with 1 tsp salt and 1/2 tsp black pepper.
  2. Step 2: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the chicken thighs skin-side down and cook for 5 minutes until golden, then flip and cook for 3 more minutes.
  3. Step 3: Remove the chicken and set aside. Add 1 lb peeled and cubed potatoes to the skillet, cooking for 5 minutes until slightly golden.
  4. Step 4: Add 3 minced garlic cloves and 2 tbsp fresh rosemary, cooking for 1 minute until fragrant.
  5. Step 5: Squeeze the juice of 1 lemon and add 1 cup chicken broth, then stir to combine.
  6. Step 6: Return the chicken to the skillet, nestling it among the potatoes. Bring to a simmer, then cover and cook for 25 minutes, or until the chicken is cooked through and potatoes are tender.
