One-Pot Garlic Tomato Penne

Ingredients
- 8 oz penne pasta
- 2 tbsp olive oil
- 4 cloves garlic
- 2 cups cherry tomatoes
- 1/4 cup fresh basil
Instructions
- Step 1: Bring a large pot of salted water to a boil. Add 8 oz penne pasta and cook for 8-10 minutes until al dente. Reserve 1/2 cup pasta water, then drain.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and cook for 60 seconds until fragrant but not browned.
- Step 3: Add drained penne, 2 cups halved cherry tomatoes, 1/2 tsp salt, and 1/4 tsp black pepper to skillet. Toss for 3 minutes until tomatoes soften. Stir in 2 tbsp reserved pasta water and 1/4 cup chopped basil, cooking until sauce coats pasta evenly.
