One-Pot Lentil & Spinach Stew

  1. Step 1: Heat 2 tbsp olive oil in a large pot over medium heat. Finely chop 1 medium onion and 3 garlic cloves, then add to pot. Sauté for 3 minutes until fragrant.
  2. Step 2: Add 1 cup brown lentils, 1 cup diced carrots, 4 cups chicken broth, 1 can diced tomatoes, 1 tsp dried oregano, and 1/2 tsp salt. Bring to a simmer.
  3. Step 3: Reduce heat to low, cover, and cook for 25 minutes until lentils are tender and carrots are soft.
  4. Step 4: Stir in 4 cups fresh spinach and cook for 2 more minutes until wilted. Adjust salt to taste.
