One-Pot Pasta Primavera

Ingredients
- 12 oz spaghetti
- 1 tbsp olive oil
- 1/2 cup, chopped onion
- 2 cloves, minced garlic
- 1 cup broccoli florets
- 1 cup, halved cherry tomatoes
- 1/2 cup, cut into 1-inch pieces asparagus
- 1/4 cup vegetable broth
- 1/4 cup, grated Parmesan cheese
- 1 tbsp, chopped fresh basil
- 1 tbsp, chopped fresh parsley
- 1/2 tsp salt
Instructions
- Step 1: Heat 1 tablespoon olive oil in a large pot over medium heat until shimmering. Add 1/2 cup chopped onion and 2 minced garlic cloves, sautéing for 3 minutes until onion is translucent and fragrant, stirring frequently to prevent browning.
- Step 2: Add 1 cup broccoli florets, 1 cup halved cherry tomatoes, and 1/2 cup asparagus, stirring to coat in oil. Cook for 2 minutes until vegetables are slightly tender.
- Step 3: Add 12 ounces spaghetti, 1/4 cup vegetable broth, and 1/2 teaspoon salt. Increase heat to medium-high, bring to a simmer, and cook, stirring occasionally, for 12-15 minutes until spaghetti is al dente and liquid has reduced to a sauce-like consistency.
- Step 4: Remove from heat. Stir in 1/4 cup grated Parmesan cheese, 1 tablespoon chopped basil, and 1 tablespoon chopped parsley. Taste and adjust seasoning with salt if needed.
