One-Pot Pasta with Sausage and Spinach

Ingredients
- 12 oz spaghetti
- 1/2 lb, casings removed Italian sausage
- 2 tbsp olive oil
- 1/2, finely chopped onion
- 2 cloves, minced garlic
- 1 can (28 oz) canned crushed tomatoes
- 1 tsp dried oregano
- 1/4 tsp red pepper flakes
- 4 oz, packed fresh spinach
- 1/2 tsp salt
- 2 tbsp, chopped fresh basil
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil; add 12 oz spaghetti and cook for 8-10 minutes until al dente, reserving 1/2 cup pasta water before draining.
- Step 2: While pasta cooks, heat 2 tbsp olive oil in a large skillet over medium-high heat; add 1/2 lb Italian sausage and cook for 5 minutes until browned, breaking into small pieces with a spoon.
- Step 3: Add 1/2 onion, finely chopped, and 2 cloves garlic, minced, to the skillet and cook for 3 minutes until fragrant, then stir in 1 can (28 oz) canned crushed tomatoes, 1 tsp dried oregano, and 1/4 tsp red pepper flakes.
- Step 4: Add the drained spaghetti to the skillet with 1/2 cup reserved pasta water, 4 oz fresh spinach, and 1/2 tsp salt; toss vigorously for 2 minutes until spinach wilts and sauce coats the pasta.
- Step 5: Remove from heat, stir in 2 tbsp fresh basil, and serve immediately.
