One-Pot Tomato Basil Beef Stew with Potatoes

Ingredients
- 1 lb Ground beef
- 1 medium Onion
- 2 Carrots
- 2 medium Potatoes
- 2 Garlic cloves
- 14 oz Canned tomatoes
- 2 cups Beef broth
- 1 tsp Dried basil
- 2 tbsp Olive oil
- 1 tsp Salt
- 1/2 tsp Black pepper
Instructions
- Step 1: Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 diced medium onion and 2 diced carrots, cooking for 5 minutes until softened.
- Step 2: Add 1 lb ground beef, breaking it up with a spoon, and cook until browned (5 minutes).
- Step 3: Stir in 2 minced garlic cloves and cook for 1 minute until fragrant.
- Step 4: Add 2 cups beef broth, 14 oz canned tomatoes (with juice), 2 diced medium potatoes, 1 tsp dried basil, 1 tsp salt, and 1/2 tsp black pepper.
- Step 5: Bring to a simmer, cover, and cook on low for 45 minutes until potatoes are tender.
