One-Pot Tomato Basil Pasta with White Beans and Spinach

Ingredients
- 8 oz penne pasta
- 1 can (15 oz), drained white beans
- 1 can (14 oz) crushed tomatoes
- 4 cloves, minced garlic
- 1/4 cup, chopped fresh basil
- 2 cups spinach
- 2 tbsp olive oil
- 1/4 tsp red pepper flakes
- 1 tsp salt
- 1/2 cup reserved pasta water
Instructions
- Step 1: Bring a large pot of salted water to a boil. Cook pasta for 1 minute less than package directions, reserving 1/2 cup pasta water before draining.
- Step 2: While pasta cooks, heat olive oil in a large skillet over medium heat. Sauté garlic and red pepper flakes for 1 minute until fragrant, then add crushed tomatoes and beans, stirring to break up beans.
- Step 3: Add drained pasta, 1/4 cup reserved pasta water, and 1/2 cup spinach to skillet. Toss vigorously for 2 minutes until sauce thickens and coats pasta, adding more pasta water if needed. Stir in 3 tbsp basil and remaining spinach until wilted.
