One-Pot Tomato Spinach and White Bean Pasta

Ingredients
- 12 oz penne pasta
- 1 tbsp olive oil
- 1 small, finely chopped onion
- 2 cloves, minced garlic
- 1 (28 oz) can diced tomatoes
- 1 (15 oz) can, drained and rinsed white beans
- 3 cups fresh spinach
- 1/2 cup vegetable broth
- 1 tsp dried oregano
- to taste salt
- to taste pepper
- 1/4 cup, grated (optional) Parmesan cheese
Instructions
- Step 1: Heat 1 tbsp olive oil in a large pot over medium heat. Add 1 small finely chopped onion and cook for 5 minutes until softened and translucent. Add 2 minced garlic cloves and cook for 1 minute until fragrant, stirring constantly.
- Step 2: Add 1 (28 oz) can diced tomatoes, 1 (15 oz) can drained white beans, 3 cups fresh spinach, 1/2 cup vegetable broth, and 1 tsp dried oregano. Stir to combine and bring to a gentle simmer.
- Step 3: Add 12 oz penne pasta to the pot, stirring to submerge. Cover and simmer for 12-15 minutes, stirring occasionally, until pasta is tender and sauce has thickened slightly.
- Step 4: Season with salt and pepper to taste. Stir in 1/4 cup grated Parmesan cheese if using. Serve hot.
