Oven-Baked Chicken Thighs with Cherry Tomatoes and Zucchini

Ingredients
- 1.5 lbs, bone-in, skin-on chicken thigh
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup, halved cherry tomato
- 1, diced zucchini
- 1/2 tsp dried oregano
Instructions
- Step 1: Preheat the oven to 400°F. Pat 1.5 lbs chicken thighs dry and season with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: Place the chicken thighs in a roasting pan and arrange 1 cup halved cherry tomatoes and 1 diced zucchini around them.
- Step 3: Drizzle with 1 tbsp olive oil and sprinkle with 1/2 tsp dried oregano.
- Step 4: Roast in the preheated oven for 35 minutes, or until the chicken is golden brown and cooked through (internal temperature 165°F).
- Step 5: Remove from the oven and let rest for 5 minutes before serving.
