Oven-Baked Mixed Vegetable Undhiyu

  1. Step 1: Preheat oven to 375°F (190°C). Peel and dice 2 medium potatoes and 1 medium sweet potato into 1/2-inch cubes.
  2. Step 2: In a large bowl, toss together diced potatoes, diced sweet potatoes, 1 cup green beans (trimmed and cut into 1-inch pieces), 1/2 cup diced carrots, 1 finely chopped onion, 2 chopped tomatoes, 3 minced garlic cloves, 1 tbsp minced ginger, 1/2 tsp cumin seeds, 1 tsp coriander powder, 1/4 tsp turmeric, 1/2 tsp red chili powder, and 1/2 tsp garam masala.
  3. Step 3: Add 2 tbsp oil and salt to taste, mixing until vegetables are evenly coated.
  4. Step 4: Transfer mixture to a baking dish and spread into an even layer.
  5. Step 5: Bake uncovered for 40-45 minutes, stirring once halfway through, until vegetables are tender and slightly caramelized.
  6. Step 6: Garnish with 2 tbsp chopped cilantro and serve hot.
