Oven-Baked Mixed Vegetable Undhiyu
A hearty baked dish featuring a medley of seasonal vegetables in a rich, spiced tomato gravy, inspired by traditional Gujarati cooking.

Ingredients
- 2 medium Potatoes
- 1 medium Sweet potatoes
- 1 cup Green beans
- 1/2 cup Carrots
- 1 medium Onion
- 2 medium Tomatoes
- 3 cloves Garlic
- 1 tbsp Ginger
- 1/2 tsp Cumin seeds
- 1 tsp Coriander powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Red chili powder
Instructions
- Step 1: Preheat oven to 375°F (190°C). Peel and dice 2 medium potatoes and 1 medium sweet potato into 1/2-inch cubes.
- Step 2: In a large bowl, toss together diced potatoes, diced sweet potatoes, 1 cup green beans (trimmed and cut into 1-inch pieces), 1/2 cup diced carrots, 1 finely chopped onion, 2 chopped tomatoes, 3 minced garlic cloves, 1 tbsp minced ginger, 1/2 tsp cumin seeds, 1 tsp coriander powder, 1/4 tsp turmeric, 1/2 tsp red chili powder, and 1/2 tsp garam masala.
- Step 3: Add 2 tbsp oil and salt to taste, mixing until vegetables are evenly coated.
- Step 4: Transfer mixture to a baking dish and spread into an even layer.
- Step 5: Bake uncovered for 40-45 minutes, stirring once halfway through, until vegetables are tender and slightly caramelized.
- Step 6: Garnish with 2 tbsp chopped cilantro and serve hot.
