Pan-Fried Cod Fillets with Lemon Capers

Ingredients
- 4 (about 6 oz / 170g each) cod fillets
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1, thinly sliced lemon
- 2 tbsp, drained capers
- 2 tbsp, chopped fresh parsley
Instructions
- Step 1: Pat 4 cod fillets (about 6 oz each) dry with paper towels. Toss with 1/2 cup all-purpose flour, 1/2 tsp salt, and 1/4 tsp black pepper in a shallow dish until evenly coated.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add cod fillets and cook for 4 minutes per side, until golden and easily flake with a fork.
- Step 3: Remove cod and set aside. Add 1 lemon (thinly sliced) to the skillet and cook for 1 minute until softened. Stir in 2 tbsp drained capers and 2 tbsp chopped fresh parsley.
- Step 4: Return cod to skillet, turning to coat in lemon-caper sauce. Cook for 1 minute more to heat through, then serve immediately.
