- 2 tbsp unsalted butter
- 1 lb asparagus
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tsp fresh thyme
Instructions
- Step 1: Preheat oven to 400°F (200°C). Place 1 lb trimmed asparagus on a baking sheet, drizzle with 1 tbsp olive oil, and sprinkle with 1/2 tsp sea salt and 1/4 tsp black pepper; toss to coat.
- Step 2: Season 1.5 lbs beef tenderloin with 1/2 tsp sea salt, 1/4 tsp black pepper, and 1 tsp fresh thyme. Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat until shimmering.
- Step 3: Sear beef on all sides for 2-3 minutes per side until golden brown. Transfer skillet to oven and roast for 10-12 minutes until internal temperature reaches 125°F for medium-rare.
- Step 4: While beef rests, melt 2 tbsp unsalted butter in the skillet over medium heat. Add 4 minced garlic cloves and cook for 1 minute until fragrant, not browned.
