- 4 (6 oz each) chicken breasts
- 1/2 cup almond flour
- 1 tsp garlic powder
- 1 tsp dried thyme
- 2 tbsp olive oil
- 1 tbsp butter
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat chicken breasts dry with paper towels and season both sides with 1/2 tsp salt, 1/4 tsp black pepper, 1 tsp garlic powder, and 1 tsp dried thyme.
- Step 2: In a shallow dish, mix 1/2 cup almond flour, 1 tsp garlic powder, and 1 tsp dried thyme. Dredge each chicken breast in the mixture, pressing gently to adhere.
- Step 3: Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering. Add chicken and cook for 5-6 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
- Step 4: Add 1 tbsp butter to the skillet during the last minute of cooking, basting the chicken until butter is melted and golden.
