Ingredients
- 4 (6 ounces each) chicken breasts
- 4 medium zucchini
- 2 tablespoons olive oil
- 3 cloves garlic
- 2 tablespoons fresh parsley
- 1 tablespoon fresh basil
- 1 lemon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Pat 4 chicken breasts (6 ounces each) dry with paper towels. Season both sides with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Step 2: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook for 6-7 minutes per side until golden and cooked through. Remove and set aside.
- Step 3: In the same skillet, add 1 tablespoon olive oil, 3 minced garlic cloves, and cook for 30 seconds until fragrant. Add 4 spiralized zucchini (medium) and cook for 3-4 minutes until tender-crisp.
- Step 4: Stir in 2 tablespoons chopped parsley, 1 tablespoon chopped basil, 1 teaspoon lemon zest, and 1 tablespoon lemon juice. Return chicken to skillet, toss to coat, and cook for 1 minute until heated through.
