Pan-Seared Salmon with Dill Caper Sauce

Ingredients
- 8 oz salmon fillets
- 2 tbsp olive oil
- 1/2 lemon
- 1 tbsp fresh dill
- 1 tbsp capers
- 2 tbsp white wine
- 1 tbsp unsalted butter
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Pat salmon dry and season with 1/4 tsp salt and 1/8 tsp black pepper. Heat 1 tbsp olive oil in a skillet over medium-high heat until shimmering.
- Step 2: Place salmon skin-side down in skillet and cook for 6-7 minutes until skin is crisp and golden. Flip, then cook 2-3 minutes more until just cooked through. Transfer to a plate and tent with foil.
- Step 3: Reduce heat to medium. Add remaining 1 tbsp olive oil, 1 tbsp minced lemon zest, 1 tbsp capers, 1 tbsp minced dill, and 2 tbsp white wine to skillet. Simmer for 2 minutes until slightly reduced. Whisk in 1 tbsp butter until melted. Pour sauce over salmon and serve immediately.
