Pan-Seared Salmon with Lemon-Dill Sauce and Cherry Tomatoes

Ingredients
- 1 lb, skin-on salmon fillets
- 2 tbsp olive oil
- 1, zested and sliced lemon
- 1 tbsp, chopped fresh dill
- 8 oz cherry tomatoes
- 2 cloves, minced garlic
- 1 tbsp butter
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Pat salmon fillets dry and season with 1/4 tsp salt and 1/8 tsp black pepper. Heat 1 tbsp olive oil in a nonstick skillet over medium-high heat until hot but not smoking.
- Step 2: Place salmon skin-side down in skillet and cook for 6-7 minutes until skin is crispy and golden, then flip and cook for 3-4 minutes more until just opaque in the center.
- Step 3: Remove salmon from skillet and keep warm. Add 8 oz cherry tomatoes, 2 minced garlic cloves, and 1/4 tsp salt to the skillet. Cook for 3-4 minutes until tomatoes burst and soften. Stir in 1 tbsp chopped dill, 1 tbsp butter, and lemon zest, then simmer for 1 minute until sauce thickens slightly. Spoon sauce over salmon and serve immediately with lemon slices.
