Paprika Beef Goulash with Root Vegetables

Ingredients
- 1.5 lbs, cut into 1-inch cubes beef chuck
- 2 tbsp sweet paprika
- 1 large, finely chopped onion
- 2 cloves, minced garlic
- 2 tbsp tomato paste
- 1 cup beef broth
- 2, peeled and cut into 1/2-inch chunks carrots
- 2, peeled and cut into 1/2-inch chunks potatoes
- 1 cup, diced turnips
- 2 tbsp olive oil
- 1/4 cup, chopped fresh parsley
Instructions
- Step 1: Pat the beef cubes dry and season with 1/2 tsp salt and 1/4 tsp black pepper. Heat 1 tbsp olive oil in a large Dutch oven over medium-high heat. Add beef in a single layer and sear for 3-4 minutes per side until browned; transfer to a plate.
- Step 2: Add remaining 1 tbsp olive oil to the pot. Sauté chopped onion until soft and translucent, about 5 minutes. Add minced garlic and tomato paste, stirring for 1 minute until fragrant.
- Step 3: Return beef to pot, add sweet paprika, and stir to coat. Pour in beef broth, then add carrots, potatoes, and turnips. Bring to a simmer, cover, and cook on low heat for 1.5 hours until beef is tender.
- Step 4: Stir in chopped parsley and adjust seasoning with salt and pepper. Serve hot with crusty bread.
