Persian Gulf-Style Grilled Fish with Lemon and Herbs

Ingredients
- 4 (6 ounces each) salmon fillets
- 2, thinly sliced lemon
- 3 tablespoons finely chopped fresh dill
- 2 tablespoons finely chopped fresh parsley
- 2 tablespoons olive oil
- 2 cloves, minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Preheat grill to medium-high (375°F). Mix 2 tablespoons olive oil, 2 minced garlic cloves, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a small bowl. Brush half of the mixture over both sides of 4 salmon fillets.
- Step 2: Place 2 lemon slices on each fillet, then sprinkle with 3 tablespoons chopped dill and 2 tablespoons chopped parsley. Rub the remaining oil mixture over the top of each fillet.
- Step 3: Place salmon on the grill, skin-side down if skin is on. Grill for 8-10 minutes, turning once halfway, until the fish is opaque and flakes easily with a fork.
- Step 4: Remove from grill and let rest for 3 minutes. Serve immediately with remaining lemon slices on the side.
