Prosciutto-Wrapped Asparagus with Aperol-Orange Dressing

- 1 lb asparagus
- 6 thin slices prosciutto slices
- 1 tbsp olive oil
- 2 tbsp Aperol
- 1 tbsp fresh orange juice
- 1 tsp Dijon mustard
- 1/2 tsp lemon zest
Instructions
- Step 1: Preheat oven to 425°F (220°C). Toss 1 lb trimmed asparagus with 1 tbsp olive oil on a baking sheet. Season with salt and pepper.
- Step 2: Roast for 12-15 minutes until crisp-tender, turning halfway.
- Step 3: While roasting, wrap each asparagus spear in one prosciutto slice, securing with a toothpick.
- Step 4: Whisk together 2 tbsp Aperol, 1 tbsp fresh orange juice, 1 tsp Dijon mustard, and 1/2 tsp lemon zest in a small bowl.
- Step 5: Arrange prosciutto-wrapped asparagus on a plate and drizzle with the dressing just before serving.
