Quick-Pickled Cucumber and Radish Salad

Ingredients
- 1 medium cucumber
- 1 cup radishes
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 1/2 teaspoon sea salt
- 1 tablespoon dill
- 1 teaspoon olive oil
Instructions
- Step 1: Slice cucumber into 1/4-inch thick half-moons and thinly slice radishes. Place in a bowl with 1/2 teaspoon sea salt, toss gently, and set aside for 10 minutes to draw out excess water.
- Step 2: Whisk together apple cider vinegar, water, and remaining 1/4 teaspoon sea salt in a small bowl until dissolved.
- Step 3: Rinse cucumber and radish slices under cold water to remove excess salt, then pat dry with paper towels.
- Step 4: Pour vinegar mixture over vegetables, add 1 tablespoon dill, and 1 teaspoon olive oil. Toss to coat evenly and let sit for at least 15 minutes before serving to allow flavors to meld.
