Rainbow Pepper and Feta Stuffed Peppers

Ingredients
- 4 medium, any color bell peppers
- 2 tbsp extra-virgin olive oil
- 1/2 cup diced red onion
- 3 tbsp, finely chopped fresh parsley
- 1/2 cup, crumbled feta cheese
- 1 tsp dried oregano
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Cut the tops off the 4 medium bell peppers and remove seeds and membranes. Brush the insides with 2 tbsp extra-virgin olive oil and place them in a baking dish.
- Step 2: In a bowl, combine 1/2 cup diced red onion, 3 tbsp finely chopped fresh parsley, 1/2 cup crumbled feta cheese, 1 tsp dried oregano, 1/2 tsp sea salt, and 1/4 tsp black pepper. Mix until evenly distributed.
- Step 3: Spoon the filling mixture into each pepper until heaping, pressing gently. Bake uncovered for 25-30 minutes until peppers are tender and edges are slightly caramelized.
