Roasted Duck Breast with Hoisin Apples

Ingredients
- 2 (6-ounce) pieces duck breast
- 3 tablespoons hoisin sauce
- 2 medium apples
- 3 medium carrots
- 2 tablespoons olive oil
- 3 cloves garlic
- 1 teaspoon fresh thyme
Instructions
- Step 1: Preheat oven to 400°F. Score skin of 2 duck breasts in a diamond pattern, then season with salt and pepper.
- Step 2: Heat a cast-iron skillet over medium heat. Place duck skin-side down and cook for 8-10 minutes until skin is golden and crisp, then flip and cook 3 minutes for medium-rare.
- Step 3: Remove duck and let rest. Add 2 tablespoons olive oil to skillet, then add 3 minced garlic cloves and 1 teaspoon fresh thyme, cooking for 1 minute until fragrant.
- Step 4: Add 2 peeled and thinly sliced apples and 3 peeled and sliced carrots to the skillet, cooking for 8 minutes until vegetables are tender and apples are caramelized.
- Step 5: Whisk 3 tablespoons hoisin sauce with 2 tablespoons water, then pour over vegetables, stirring to coat.
- Step 6: Slice duck breasts and arrange over vegetable mixture. Drizzle with pan sauce and serve immediately.
