Instructions
- Step 1: Preheat oven to 425°F. Pat 4 bone-in, skin-on chicken thighs dry and season with 1 tsp salt and 1/2 tsp black pepper evenly.
- Step 2: Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat until shimmering. Add chicken thighs skin-side down along with 5 smashed garlic cloves, 2 sprigs rosemary, and 2 sprigs thyme. Sear for 6-7 minutes until skin is deep golden and crispy.
- Step 3: Flip the chicken thighs over and transfer the skillet to the preheated oven. Roast for 15 minutes until the chicken reaches an internal temperature of 165°F.
- Step 4: Remove skillet from oven and transfer chicken to a plate tented with foil to rest.
- Step 5: Place skillet back on medium heat, add 1 cup chicken broth and 2 tbsp lemon juice to the pan, scraping up browned bits with a wooden spoon. Simmer for 3-4 minutes until the sauce reduces slightly and thickens.
- Step 6: Pour the pan sauce over the chicken thighs and serve warm.
