Ingredients
- 8 small corn tortillas
- 1 medium sweet potato
- 1/4 cup thinly sliced red onion
- 1 medium avocado
- 1 lime
- 1/4 cup sour cream
- 2 tbsp chopped cilantro
- 1 tbsp olive oil
- 1/2 tsp cumin
Instructions
- Step 1: Preheat oven to 400°F (200°C). Dice sweet potato into 1/4-inch cubes, toss with 1 tbsp olive oil, 1/2 tsp cumin, salt, and pepper.
- Step 2: Roast sweet potatoes for 20 minutes until fork-tender, stirring once halfway through.
- Step 3: Warm corn tortillas in a dry skillet for 30 seconds per side until pliable.
- Step 4: Mash avocado with lime juice, 1 tbsp water, salt, and 1 tbsp cilantro to make sauce.
- Step 5: Assemble tacos: layer roasted sweet potatoes, red onion slices, and a dollop of avocado sauce on warm tortillas, garnish with remaining cilantro.
