  2. Step 2: Rinse rice under cold water until water runs clear, then combine with water in a medium pot.
  3. Step 3: Bring to a rolling boil over high heat, cover tightly, reduce heat to low, and simmer for 18 minutes until water is absorbed.
  4. Step 4: Remove from heat; let rice rest, covered, for 10 minutes.
  5. Step 5: While rice cooks, melt butter in a small skillet over medium heat. Add sliced almonds and toast for 2-3 minutes until golden, stirring constantly.
  6. Step 6: Fluff cooked rice with a fork, add saffron water and lemon zest, then gently fold in toasted almonds.
