Sake-Infused Miso-Glazed Salmon with Shiso

Ingredients
- 6 oz salmon fillets
- 2 tbsp honjozo sake
- 1 tbsp white miso paste
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 4 shiso leaves
Instructions
- Step 1: Whisk together 2 tbsp honjozo sake, 1 tbsp white miso paste, and 1 tsp rice vinegar in a small bowl until smooth.
- Step 2: Pat 6 oz salmon fillets dry with paper towels, then brush both sides with the miso-sake mixture.
- Step 3: Heat 1 tsp sesame oil in a non-stick skillet over medium heat until shimmering, then add salmon skin-side down. Cook for 4 minutes until golden brown, then flip and cook 2 minutes more.
- Step 4: Brush with remaining sauce and cook 1 minute until glaze bubbles and thickens, then transfer to a plate and top with 4 fresh shiso leaves.
