Instructions
- Step 1: Meat: toss the sliced meat with half the garlic, 1 tablespoon of ginger, 1 teaspoon each of cumin and chili powder, 1/2 teaspoon of turmeric, 1 tablespoon of mustard oil and salt. Marinate for 20 minutes, then sear in a very hot skillet or grill for 2-3 minutes per side until charred.
- Step 2: Potato salad (aloo achar): boil the potatoes until tender, peel and cube them. Toss with the ground sesame, 2 tablespoons of lemon juice, the remaining chili powder, green chilies and salt. Heat 2 tablespoons of mustard oil, fry the fenugreek seeds until dark, and pour this over the potatoes.
- Step 3: Soybeans: dry-roast the soybeans in a pan for 8-10 minutes until crunchy. Toss with 1 tablespoon of mustard oil, the remaining garlic, the remaining cumin and salt.
- Step 4: Eggs: hard-boil the eggs for 10 minutes, then peel and halve them. Rub them with turmeric and salt and pan-fry briefly in 1 tablespoon of mustard oil until golden.
- Step 5: Radish pickle: toss the daikon with salt, the remaining turmeric and lemon juice, and leave for 10 minutes.
- Step 6: To assemble, put a mound of beaten rice on each plate. Arrange the meat, potato salad, soybeans, eggs, radish pickle and the remaining julienned ginger around it. Garnish with cilantro and serve.
