Instructions
- Step 1: Pat dry 4 boneless skinless chicken thighs and season both sides with 1 tsp salt, 1/2 tsp black pepper, and 1 tsp smoked paprika. Heat 2 tbsp olive oil in a large skillet over medium-high heat.
- Step 2: Add the chicken thighs to the skillet and sear for 5-6 minutes per side until golden brown and cooked through; remove and set aside.
- Step 3: Reduce heat to medium and add 1 tbsp olive oil to the same skillet. Add 1 medium thinly sliced yellow onion and sauté for 5 minutes until translucent and beginning to caramelize.
- Step 4: Add 8 oz sliced cremini mushrooms and 3 minced garlic cloves to the onions and cook for another 5 minutes until mushrooms are soft and fragrant.
- Step 5: Pour in 1 cup chicken broth and add 1 tsp fresh thyme leaves. Simmer the mixture over medium heat for 8-10 minutes until the sauce thickens and reduces by about half.
- Step 6: Return the chicken thighs to the pan, spoon the mushroom and onion reduction over them, and cook for 2 more minutes to warm through before serving.
