- 4 oz shredded cheddar cheese
- 2 tbsp finely chopped fresh parsley
- 1/2 tsp dried thyme
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 cloves minced garlic
- 1/4 cup heavy cream
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Preheat oven to 375°F. Cut a horizontal slit into the thickest part of each chicken breast. Season inside pocket with 1/4 tsp salt, 1/8 tsp black pepper, 1/2 tsp dried thyme, and 1 tbsp chopped parsley.
- Step 2: Stuff each pocket with 1 oz shredded cheddar cheese and 1 tbsp chopped parsley, securing with toothpicks. Season outside with 1/4 tsp salt and 1/8 tsp black pepper.
- Step 3: Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2 minutes per side until golden, then transfer skillet to oven and bake 18-20 minutes until internal temperature reaches 165°F.
- Step 4: While chicken bakes, melt 2 tbsp butter in a small saucepan over medium heat. Add 2 minced garlic cloves and cook for 1 minute until fragrant. Stir in 1/4 cup heavy cream and 1 tbsp lemon juice, simmering 2 minutes until sauce thickens slightly.
