Savory Herb-Roasted Sweet Potatoes

Ingredients
- 2 lbs sweet potatoes
- 3 tbsp olive oil
- 1 tbsp rosemary
- 4 cloves garlic
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F. Peel and cut 2 lbs sweet potatoes into 3/4-inch wedges, then toss with 3 tbsp olive oil, 1 tsp salt, and 1/2 tsp black pepper.
- Step 2: Arrange in a single layer on a parchment-lined baking sheet. Roast for 20 minutes.
- Step 3: While roasting, mince 4 garlic cloves and chop 1 tbsp fresh rosemary.
- Step 4: After 20 minutes, toss roasted potatoes with minced garlic and rosemary. Return to oven and roast for 15-20 more minutes until golden brown and tender when pierced with a fork.
- Step 5: Cool 5 minutes before serving to develop crisp edges.
