Savory Kombucha-Glazed Salmon with Roasted Asparagus

Ingredients
- 1.5 lbs salmon fillets
- 12 oz asparagus
- 3 tbsp olive oil
- 1/4 cup GT's Kombucha
- 1 tbsp lemon juice
- 2 minced garlic cloves
- 1 tsp dried thyme
Instructions
- Step 1: Preheat oven to 400°F. Place salmon fillets skin-side down on a parchment-lined baking sheet. Drizzle with 2 tbsp olive oil, then season with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: Arrange 12 oz trimmed asparagus evenly around salmon. Drizzle with remaining 1 tbsp olive oil and sprinkle with 1 minced garlic clove and 1/2 tsp thyme.
- Step 3: In a small bowl, whisk together 1/4 cup GT's Kombucha, 1 tbsp lemon juice, and 1 minced garlic clove. Pour mixture over salmon and asparagus.
- Step 4: Roast for 18-20 minutes until salmon reaches 125°F internally and asparagus is tender-crisp.
- Step 5: Transfer salmon to a plate, reserving pan juices. Drizzle with pan juices and sprinkle with remaining 1/2 tsp thyme before serving.
