Sear-Safe Salmon with Dill Sauce

Ingredients
- 6 oz salmon fillets
- 1 tbsp extra-virgin olive oil
- 1/2 lemon
- 3 tbsp fresh dill
- 2 tbsp plain Greek yogurt
- 1 clove garlic
- 1/4 tsp sea salt
- 1/8 tsp black pepper
Instructions
- Step 1: Pat 6 oz salmon fillets dry with paper towels, then season both sides with 1/4 tsp sea salt and 1/8 tsp black pepper.
- Step 2: Heat 1 tbsp olive oil in a non-stick skillet over medium-high heat until shimmering. Place salmon skin-side down and cook for 4 minutes until skin is crisp, then flip and cook for 3 minutes more until internal temperature reaches 125°F.
- Step 3: While salmon cooks, mince 1 garlic clove and whisk with 2 tbsp fresh dill, 2 tbsp Greek yogurt, and 1 tbsp lemon juice from 1/2 lemon until smooth. Drizzle sauce over cooked salmon and serve immediately.
