  1. Step 1: Pat 6 oz salmon fillets dry with paper towels, then season both sides with 1/4 tsp sea salt and 1/8 tsp black pepper.
  2. Step 2: Heat 1 tbsp olive oil in a non-stick skillet over medium-high heat until shimmering. Place salmon skin-side down and cook for 4 minutes until skin is crisp, then flip and cook for 3 minutes more until internal temperature reaches 125°F.
  3. Step 3: While salmon cooks, mince 1 garlic clove and whisk with 2 tbsp fresh dill, 2 tbsp Greek yogurt, and 1 tbsp lemon juice from 1/2 lemon until smooth. Drizzle sauce over cooked salmon and serve immediately.
