Seared Cod with Lemon-Caper Sauce

Ingredients
- 4 (6 ounces each) cod fillets
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup drained capers
- 2 tablespoons juice lemon
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh dill
Instructions
- Step 1: Pat cod fillets dry with paper towels, then season both sides with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Step 2: Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Add cod skin-side down (if applicable) and cook for 4-5 minutes until golden brown and crispy.
- Step 3: Flip cod and cook for 3-4 minutes more until fully cooked through. Transfer to a plate and set aside.
- Step 4: Add remaining 1 tablespoon olive oil to the skillet, then stir in 1/4 cup drained capers and cook for 1 minute until sizzling.
- Step 5: Pour in 2 tablespoons lemon juice and cook for 1 minute, then return cod to the skillet. Spoon sauce over fillets and sprinkle with 1 tablespoon chopped parsley and 1 tablespoon chopped dill. Cook for 1 minute to heat through.
