Sheet Pan Caramelized Onion and Thyme Chicken Thighs

Ingredients
- 4 bone-in, skin-on (2.5 lbs) chicken thighs
- 2 medium, thinly sliced yellow onions
- 4 cloves, minced garlic
- 1 tbsp, leaves stripped fresh thyme
- 2 tbsp avocado oil
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F. Pat chicken thighs dry with paper towels, then season with 1 tsp sea salt and 1/2 tsp black pepper.
- Step 2: Heat 2 tbsp avocado oil in a large ovenproof skillet over medium-high heat. Add chicken skin-side down, pressing gently to ensure even contact with pan; cook for 5 minutes until golden brown, then flip and sear for 2 more minutes.
- Step 3: Transfer chicken to a sheet pan, leaving rendered fat in skillet. Add sliced onions and minced garlic to the skillet; cook over medium heat for 10 minutes until onions are deep amber and caramelized, stirring occasionally.
- Step 4: Scatter caramelized onions and garlic around chicken on the sheet pan. Sprinkle with thyme, then roast for 20 minutes until chicken reaches 165°F internally and onions are tender.
